Green Chile Queso

Servings: 8 (1/4 c. each)


½ c. raw cashews
¼-½ c. water
¼ orange pepper, chopped
2 T. nutritional yeast
¼ tsp. garlic powder
⅛ tsp. chili powder
⅛ tsp. smoked paprika
½ tsp. pink salt
¼ c. unsweetened almond milk
⅛ tsp. xanthan gum
½ c. chunky salsa
¼ c. canned chopped green chiles


  1. Place cashews in bowl and cover with water.
  2. Allow to sit for at least 30 minutes.
  3. Rinse cashews and transfer to blender cup with ½ cup water, chopped pepper, nutritional yeast, spices, and almond milk.
  4. Process until very smooth, adding more water if too thick.
  5. Add xanthan gum and process again.
  6. Stir in salsa and chiles.
