Healthy Egg Rolls

Ingredients:

3 Julian Bakery Paleo Wraps
1/2 T coconut oil
1/2 c green cabbage, shredded thin
1/2 c carrot, shredded
1/2 c zucchini, shredded
1/4 c fresh chopped basil
1/4 c chopped cilantro (or parsley)

Directions:

  1. Preheat oven to 350 degrees
  2. Melt coconut oil in skillet over medium heat
  3. Add veggies and herbs and cook about 5 minutes, until softened
  4. Place Paleo Wraps on flat surface so they look like a diamond, not square
  5. Spoon 1/3 of veggie mixture onto each Paleo Wrap 
  6. Fold bottom corner up, sides in, then roll toward top corner to close egg roll
  7. Transfer to greased or parchment-lined baking sheet
  8. Bake about 5 minutes or until golden brown

(Alternatively, you can pan fry egg rolls in a greased skillet turning every 30 seconds until golden brown)
