Italian Cod with "Rice"

6 oz cod
1/2 c tomato sauce (no sugar addded)
1/2 c italian diced tomatoes
8 oz Sage Cauli Stuffing (or plain riced cauliflower)
8 drops stevia
1/2 t paprika
1/8 t cinnamon
1T parsley
1/4 t onion powder
1/4 t garlic powder
1 clove minced garlic
lemon juice
pink salt and pepper, to taste


  1. Preheat oven to 350 degrees and line baking sheet with parchment paper
  2. Place cod on baking sheet and coat with lemon juice
  3. Bake for 12-15 minutes
  4. In saucepan over med-high heat, combine tomato sauce, diced tomatoes, garlic, and spices
  5. Cook, stirring frequently, until heated
  6. Plate cauliflower, then cod, then sauce on top
