Ingredients:
6 oz cod
1/2 c tomato sauce (no sugar addded)
1/2 c italian diced tomatoes
8 oz Sage Cauli Stuffing (or plain riced cauliflower)
8 drops stevia
1/2 t paprika
1/8 t cinnamon
1T parsley
1/4 t onion powder
1/4 t garlic powder
1 clove minced garlic
lemon juice
pink salt and pepper, to taste
Directions:
- Preheat oven to 350 degrees and line baking sheet with parchment paper
- Place cod on baking sheet and coat with lemon juice
- Bake for 12-15 minutes
- In saucepan over med-high heat, combine tomato sauce, diced tomatoes, garlic, and spices
- Cook, stirring frequently, until heated
- Plate cauliflower, then cod, then sauce on top
