Ingredients:
5 oz kale
5 oz tomatoes
2 whole eggs + 3 whites, hard boiled
1-2 T apple cider vinegar
pink salt, to taste
pepper, to taste
stevia, to taste (optional)
Directions:
- Remove egg yolks and place in small bowl
- Whisk in apple cider vinegar, pink salt, pepper, and stevia, if desired
- Toss kale in dressing mixture
- Chop tomato and hard boiled egg whites into bite sized pieces
- Place on top of bed of kale
- Season with additional pink salt and pepper
