2 T. coconut flour
2 T. unflavored whey protein powder
1/4 tsp. baking powder
1/16 tsp. pink salt
- Grease ramekin or small bowl.
- Blend together cottage cheese and egg.
- Pulse or stir in all other ingredients.
- Scoop batter into ramekin and tap on counter a few times to distribute evenly.
- Microwave for 2-3 minutes.
- Slice in half then toast each slice.
