Mexican Goulash

8 oz. lean ground beef
12 oz. frozen chopped peppers
1 chopped onion
1-2 tsp. Taco Seasoning
2 c. spinach
1 c. coleslaw mix (or shredded cabbage)
2 T. nutritional yeast
2 T. canned green chiles
2 T. salsa
¼ c. tomato paste


  1. Brown beef in skillet over medium high heat.
  2. Stir in peppers, onions, and cabbage mix then cover and cook, stirring occasionally, until softened.
  3. Stir in spinach, chiles, and taco seasoning and cook a few more minutes.
  4. Add salsa, tomato paste, and nutritional yeast and stir until combined.
