Moroccan Fish with Apples & Onions

Ingredients:

1 (5 oz) onion
1 apple
4.5 oz cod (or other fish of choice)
1 T Bragg’s liquid aminos or coconut aminos
1 t Moroccan spices
1/2 t Pumpkin pie spice/cinnamon
Pink salt, to taste

Directions:

  1. Preheat oven to 400 degrees
  2. Remove paper skin from onion & slice off the top
  3. Poke holes in top with a knife
  4. Place onion in small baking dish & slowly dribble with liquid aminos (You don’t want the liquid in the baking dish; you want it in the onion)
  5. Cover with tin foil & place in oven for 45 minutes
  6. Drizzle fish with liquid aminos then liberally sprinkle with Moroccan spices on both sides
  7. Place in small baking dish
  8. Cut up half the apple into small chunks and place around and on top of fish
  9. Dust lightly with pumpkin pie spice and/or cinnamon
  10. Cover with tin foil
  11. Cut up the other half of the apple in similar chunks & sprinkle lightly with pink salt then set aside
  12. When the 45 minutes is done, leave the onion in the oven and place the fish/apple dish in as well
  13. Bake 15 minutes then remove both dishes from oven
  14. Cut the onion into pieces on a plate
  15. Carefully remove fish and apples with a fish spatula and place on top of onions
  16. Sprinkle uncooked apple pieces on top
