Ingredients:
1 egg
1/3 c egg whites
1 T flax meal
1 1/2 T coconut flour
1/4 t garlic powder
1/2 t oregano, divided
2-3 T tomato sauce
1/4 c cottage cheese
1/2 T Bragg’s Nutritional Yeast
Directions:
- Whisk together egg, egg whites, coconut flour, flax meal, garlic powder, and 1/4 t oregano
- Pour mixture into greased skillet over medium heat
- Cover and allow to cook for 3-4 minutes
- Flip, cover again, and cook another 2 minutes
- Place crust onto piece of foil
- Spread thin layer of tomato sauce on crust, stopping 1/4″ from edge
- Process cottage cheese, nutritional yeast, and remaining oregano in mini chopper/food processor
- Drop cheese mixture by the tablespoon on top of sauce and spead into circles
- Transfer pizza to toaster over and toast for 5 minutes
- Remove and cut into triangles with pizza cutter
