No-tato Tomato Salad

10 oz radishes
2 T full-fat plain greek yogurt
2 T Daisy cottage cheese
6 grape tomatoes
1 t apple cider vinegar
3 t dijon mustard
1.5 t dill
pink salt and pepper, to taste

  1. Chop radishes into small cubes
  2. Boil in a medium saucepan until soft when piercing with a fork
  3. Drain with collander and rinse with cold water
  4. Transfer to bowl
  5. Slice tomatoes into rounds and add to bowl
  6. Stir in yogurt, cottage cheese, apple cider vinegar, mustard, dill, salt and pepper
