Ooey Gooey Chocolate Chip Cookie Pie

Ingredients:

1 (15 oz) can chickpeas (drained and rinsed)
½ c. quick oats
½ c. IMO fiber [or honey (+30 cal/serving)]
2 dropperfuls stevia
½ tsp. pink salt
1 tsp. baking powder
¼ tsp. baking soda
1/4 c. unsweetened applesauce
1/3 c. unsweetened almond milk
1 1/2 T. coconut oil
2 tsp. vanilla extract
½ c. Enjoy Life chocolate chips

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease 8 inch round pan.
  3. Combine all ingredients (except chocolate chips) in food processor until smooth.
  4. Stir in chocolate chips.
  5. Pour batter into pan.
  6. Bake 30 minutes (or longer if you want a less gooey cookie).
  7. Allow to cool 15 minutes before cutting.
