Ingredients:

6 egg whites
3/4 cup blanched almond flour
1/4 cup coconut flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 tablespoons coconut oil, chilled

Directions:

  1. Preheat oven to 400 degrees. 
  2. Line a baking sheet with parchment paper. 
  3. Mix almond flour, coconut flour, baking powder and salt together in a large mixing bowl. 
  4. Cut in cold coconut oil with a fork until the mixture is crumbly. 
  5. Place the bowl in the refrigerator for 10 minutes. 
  6. In a medium bowl whisk egg whites until they are very frothy. 
  7. Fold the egg whites into the chilled flour mixture until well combined. 
  8. Scoop about 1/4 cup of dough onto the baking sheet and smooth the top to form each biscuits, an ice cream scoop works well in this step. 
  9. Bake for 15-18 minutes, or until the tops are golden brown. 
  10. Serve warm or store in an airtight container in the refrigerator.
