Paleo English Muffin

Ingredients:

1 egg, beaten
1 T unsweetened almond milk or coconut milk
1 T coconut flour
½ T butter or coconut oil, melted
½ t baking powder
6 drops stevia, optional
1 pinch pink salt, optional

Directions:

  1. Melt butter/oil in round ceremic/glass ramekin
  2. Add all ingredients to the ramekin, except baking powder, and stir with a fork
  3. Add baking powder and stir in well
  4. Stir, scraping sides, until clump free
  5. Cook in microwave for 1 minute and 30 Seconds, or bake in oven at 400 F for 12-15 minutes, until middle is firm
  6. Loosen edges by taking knife between muffin and ramekin
  7. Cool, enough to handle, then remove from bowl and cut in half sideways
  8. Toast in buttered/oiled frying pan, until lightly browned on each side (like a pancake), using spatula to press the tops of muffin down lightly
