Ingredients:
2 garlic cloves
1 egg yolk
2 t lemon juice
1/2 t dijon mustard
1/4 c olive oil
1 bunch fresh basil
1/4 t pink salt, or more to taste
pepper, to taste
Directions:
- Mince garlic to a paste with pink salt
- Add garlic mixture, egg yolk, lemon juice, and mustard to blender/food processor
- Add oil and pulse until oil is incorporated and mixture is emulsified
- Add basil and continue to process
- Season with pink salt and pepper, to taste
- Whisk in some water if mixture is too thick
- Chill, covered, until ready to eat
