Pesto Aioli

2 garlic cloves
1 egg yolk
2 t lemon juice
1/2 t dijon mustard
1/4 c olive oil
1 bunch fresh basil
1/4 t pink salt, or more to taste
pepper, to taste


  1. Mince garlic to a paste with pink salt 
  2. Add garlic mixture, egg yolk, lemon juice, and mustard to blender/food processor
  3. Add oil and pulse until oil is incorporated and mixture is emulsified
  4. Add basil and continue to process
  5. Season with pink salt and pepper, to taste
  6. Whisk in some water if mixture is too thick
  7. Chill, covered, until ready to eat
