Ingredients:
4 chicken tenders
1/4 cup shredded, unsweetened coconut
1/4 c egg whites (or 1 egg)
2 t coconut oil
1/2 c unsweetened, crushed pineapple
Directions:
- Dip chicken pieces in egg
- Heat coconut oil in frying pan
- Coat egg dipped chicken in shredded coconut, pressing down to even out the thickness of the chicken
- Saute coated chicken in 1 tsp coconut oil until browned, turn over and brown on other side using remainder of coconut oil
- In a separate pan, heat crushed pineapple until juice slightly thickens
