4 chicken tenders
1/4 cup shredded, unsweetened coconut
1/4 c egg whites (or 1 egg)
2 t coconut oil
1/2 c unsweetened, crushed pineapple


  1. Dip chicken pieces in egg
  2. Heat coconut oil in frying pan
  3. Coat egg dipped chicken in shredded coconut, pressing down to even out the thickness of the chicken
  4. Saute coated chicken in 1 tsp coconut oil until browned, turn over and brown on other side using remainder of coconut oil
  5. In a separate pan, heat crushed pineapple until juice slightly thickens
