Pumpkin Banana Oat Bread

Ingredients:

2 ripe bananas
4 eggs
1 c. pumpkin puree
1/4 c. honey
1 tsp. vanilla extract
1 3/4 c. oat flour
1/2 c. tapioca flour
1 tsp. baking soda
1/2 tsp. pink salt
1 1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice
1/4 tsp. cloves
1/4 tsp. ginger

 

Directions:

  1. Preheat oven to 350 degrees.
  2. Line 9×5 inch loaf pan with parchment paper.
  3. Place bananas, eggs, pumpkin, honey, and vanilla in blender and mix until smooth.
  4. In a large bowl, combine oat flour, tapioca flour, baking soda, salt, and spices.
  5. Pour wet ingredients into dry and stir to combine.
  6. Pour batter into loaf pan.
  7. Bake for 60 minutes or until toothpick inserted in center comes out clean.
