Ingredients:
2 ripe bananas
4 eggs
1 c. pumpkin puree
1/4 c. honey
1 tsp. vanilla extract
1 3/4 c. oat flour
1/2 c. tapioca flour
1 tsp. baking soda
1/2 tsp. pink salt
1 1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice
1/4 tsp. cloves
1/4 tsp. ginger
Directions:
- Preheat oven to 350 degrees.
- Line 9×5 inch loaf pan with parchment paper.
- Place bananas, eggs, pumpkin, honey, and vanilla in blender and mix until smooth.
- In a large bowl, combine oat flour, tapioca flour, baking soda, salt, and spices.
- Pour wet ingredients into dry and stir to combine.
- Pour batter into loaf pan.
- Bake for 60 minutes or until toothpick inserted in center comes out clean.
