2 eggs
1 c. pumpkin puree
3 dropperfuls vanilla or plain liquid stevia (or more, to taste)
1 1/2 c. Vanilla Nut Paleo Protein Powder (or other protein powder of choice)
1/2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. allspice
1/4 tsp. pink salt


  1. Preheat oven to 350 degrees.
  2. Line muffin tins with liners.
  3. Whisk together eggs, pumpkin, and stevia.
  4. Add in all dry ingredients.
  5. Pour batter evenly into 12 muffin tins.
  6. Bake 25-30 minutes.
  7. Remove from oven and allow to cool for 10 minutes.
