Ingredients:
2 c pumpkin puree
2 c edamame
1 large onion, chopped
2-3 T minced garlic
4 T pumpkin pie spice
1 lb ground turkey
2 c Swanson chicken stock
2 c unsweetened almond milk
2 T coconut oil
2 dropperfuls stevia
Directions:
- Melt coconut oil in large saucepan over med-high heat
- Add chopped onions, garlic, and turkey and cook until turkey is cooked through
- Stir in chicken stock, pumpkin, almond milk, edamame, stevia, and pumpkin pie spice
- Place lid on saucepan, reduce heat, and cook another 10-15 minutes, stirring occasionally
