Pumpkin Turkey Chili

2 c pumpkin puree
2 c edamame
1 large onion, chopped
2-3 T minced garlic
4 T pumpkin pie spice
1 lb ground turkey
2 c Swanson chicken stock
2 c unsweetened almond milk
2 T coconut oil
2 dropperfuls stevia


  1. Melt coconut oil in large saucepan over med-high heat
  2. Add chopped onions, garlic, and turkey and cook until turkey is cooked through
  3. Stir in chicken stock, pumpkin, almond milk, edamame, stevia, and pumpkin pie spice
  4. Place lid on saucepan, reduce heat, and cook another 10-15 minutes, stirring occasionally
