Sour Cream Crustless Cheesecake

24 oz sour cream
24 oz cream cheese
3 eggs
stevia, to taste
1 t vanilla extract


  1. Preheat oven to 350 degrees.
  2. Blend all ingredients in food processor or blender.
  3. Pour into a wax paper lined spring pan.
  4. Bake for 1 hour.
  5. Turn oven off and leave door ajar for an hour.
  6. Remove from oven and refrigerate overnight.
  7. Take cake out of pan by flipping onto a plate.
  8. Remove wax paper.
  9. Blot any moisture and reflip cake.
