Spicy Tomato Snapper

5 oz snapper
8 oz tomatoes
1 t minced onion
1/2 t garlic powder
1/4 t rosemary
1/8 t sage
1/2 t chili powder
1/4 t mustard powder
1/8 t pepper
1/8 t ground ginger


  1. Preheat 1/4 c water in large skillet over med-high heat
  2. Cut tomatoes in fairly large chunks
  3. Place tomatoes and spices in skillet and stir well
  4. Cover and simmer for about 5 minutes
  5. Stir and simmer a couple more minutes
  6. Carve out a spot in the middle for the fish & lay it in the pan 
  7. Cover and cook 3 minutes
  8. Flip fish 
  9. Cover and cook 3 more minutes
