Ingredients:
1 lb ground turkey, browned in skillet
4 c cauliflower florets
2 T olive oil
1 onion, chopped
3-4 cloves garlic, minced
4 medium tomatoes, chopped
1 fresh chili pepper, deseeded and chopped
1/2 t chili flakes
1/2 t cumin
1 t oregano
1/2 t garlic powder
1 c chicken stock or water
1/2 c fresh cilantro, chopped
1 t lime juice
pink salt and pepper, to taste
10 jalapeno pepper slices (more or less, to taste)
Directions:
- Place cauliflower florets in food processor and pulse a few times until rice-like consistency is reached
- Heat olive oil in large skillet over medium heat
- Add onion, garlic, and chili and saute 5 minutes
- Stir in tomatoes, stock, oregano, cumin, and chili flakes
- Bring to simmer and cook for 20 minutes
- Add cooked turkey, garlic powder, salt and pepper
- Top with jalapeno slices, cilantro and lime juice before serving
