Ingredients:
1 T coconut oil
3/4 c egg whites
1 small apple
2 c spinach
1/4-1/2 t cinnamon
1/4-1/2 t basil
pink salt, to taste
Directions:
- Melt coconut oil in skillet over med-high heat
- Saute apple and spinach until soft
- Stir in cinnamon and basil
- Pour egg whites into skillet and stir until bottom is coated
- Place lid on skillet, reduce heat, and cook until eggs are bubbly
- Flip and cook on other side
