Spinach Apple Fritatta

1 T coconut oil
3/4 c egg whites
1 small apple
2 c spinach
1/4-1/2 t cinnamon
1/4-1/2 t basil
pink salt, to taste


  1. Melt coconut oil in skillet over med-high heat
  2. Saute apple and spinach until soft
  3. Stir in cinnamon and basil
  4. Pour egg whites into skillet and stir until bottom is coated
  5. Place lid on skillet, reduce heat, and cook until eggs are bubbly
  6. Flip and cook on other side
