Spinach Pizza Crust

Servings: 1 crust

Ingredients:

2 c spinach (fresh or frozen)
1 egg 
1 c freshly shredded mozzarella cheese
pink salt and pepper, to taste
additional spices (optional)
 

Directions:

  1. Preheat oven to 425 degrees
  2. Line pizza pan with parchment paper 
  3. If using frozen spinach: defrost then place in tea towel or cheese cloth and wring out as much water as possible
  4. In blender or food processor blend spinach until it is well pureed
  5. Add egg and pulse until combined
  6. Add cheese, salt, pepper, and other spices and pulse until just combined
  7. Spread evenly on prepared pizza pan
  8. Bake for 15 minutes or until edges are browned and crispy
  9. Flip crust and bake for an additional 5-7 minutes
  10. (After baking crust, top with sauce, cheese and choice of toppings then return to oven to bake until cheese is melted)
