Spinach Stuffed Mushrooms
4 oz baby spinach
2 tbsp chopped parsley
2 tbsp garlic, chopped
4 large mushrooms
1/4 cup part skim ricotta cheese
1/4 cup grated parmigiano reggiano
1/4 tsp pink salt (or to taste)
1/4 tsp fresh ground pepper
8 large mushrooms (stems removed)
- Combine spinach, parsley, scallions, garlic, 4 mushrooms, cheeses, pink salt, and pepper in a food processor/blender to form a paste.
- Spoon 1/8 of the paste into each large mushroom cap.
- Broil until brown on top.
