1 T coconut oil
1 large portabella mushroom cap
2 eggs
2 T feta cheese crumbles
1/8 t rosemary
1/8 t garlic powder
pink salt and pepper, to taste


  1. Slice mushroom into thin strips
  2. Melt coconut oil in skillet over med-high heat
  3. Add mushrooms and cook until softened
  4. Stir in rosemary, garlic powder, pink salt, and pepper
  5. Crack eggs on top of mushrooms
  6. Place lid on skillet and cook until egg whites are cooked through
  7. Transfer to plate
  8. Sprinkle with feta cheese
