Thai Curry Flounder

Ingredients:

2 c cauliflower, riced
6 oz flounder
1.5 c Peking Blend frozen veggies (carrots, broccoli, snap peas, onions)
1/3 c canned coconut cream
2 T red curry paste

Directions:

  1. Steam cauliflower then drain
  2. Steam or bake fish
  3. Cook veggies in large skillet in canned coconut cream
  4. Stir in curry paste and flounder
  5. Serve over riced cauliflower
