Tuna Zoodle Casserole Skillet

1 can albacore tuna
8 oz zucchini
1 T minced garlic
1 T apple cider vinegar
2 T dijon mustard
1/2 t onion powder
1 t italian seasoning
1/2 t thyme
pink salt and pepper, to taste


  1. Heat vinegar in skillet over medium heat and add undrained tuna and garlic
  2. Use a potato peeler to cut zucchini into strips then cut into thirds
  3. Stir zucchini into skillet and place lid on top for 3-5 minutes
  4. Remove lid and stir in mustard, onion powder, italian seasoning, and thyme
  5. Place lid on top again and cook until zucchini is tender
  6. Drain liquid then season with pink salt and pepper
