Turkey Veggie Chili

1 lb. ground turkey
1/2 eggplant, chopped
1 onion, chopped
1 green pepper, chopped
8 oz sliced mushrooms
1 (14.5 oz) can diced tomatoes
1 c. tomato sauce
1 T. Italian seasoning
1 tsp. garlic powder
2 tsp. cumin
3 T. chili powder
2 tsp. paprika
2 tsp. pink salt
1/4 tsp. cayenne pepper


  1. Cook turkey in large saucepan over medium-high heat until slightly browned.
  2. Stir in all fresh vegetables and continue to cook until beginning to soften.
  3. Stir in spices, diced tomatoes, and tomato sauce then bring to a boil.
  4. Reduce heat to simmer.
  5. Place lid on saucepan and cook for at least 15 minutes, stirring occasionally.
