Ingredients:
1 lb. ground turkey
1/2 eggplant, chopped
1 onion, chopped
1 green pepper, chopped
8 oz sliced mushrooms
1 (14.5 oz) can diced tomatoes
1 c. tomato sauce
1 T. Italian seasoning
1 tsp. garlic powder
2 tsp. cumin
3 T. chili powder
2 tsp. paprika
2 tsp. pink salt
1/4 tsp. cayenne pepper
Directions:
- Cook turkey in large saucepan over medium-high heat until slightly browned.
- Stir in all fresh vegetables and continue to cook until beginning to soften.
- Stir in spices, diced tomatoes, and tomato sauce then bring to a boil.
- Reduce heat to simmer.
- Place lid on saucepan and cook for at least 15 minutes, stirring occasionally.
