Walnut Surprise Muffins

Ingredients:

2 t vanilla extract
1 t pink salt
3/4 t baking soda
1/4 c coconut oil, melted
3/4 c coconut flour
4 bananas
7 eggs
12 walnut halves
1 T cinnamon

Directions:

  1. Preheat oven to 350 degrees
  2. Place liners in 12 muffin tins
  3. Combine bananas, coconut oil, vanilla, and eggs in food processor
  4. Mix in coconut flour, cinnamon, salt, and baking soda
  5. Allow to sit for 3-4 minutes for batter to thicken
  6. Pour batter into muffin tins equally
  7. Press 1 walnut half inside center of each muffin
  8. Bake 25-30 minutes, until toothpock inserted in center comes out clean
