Ingredients:
1 c grape tomatoes
1/2 red bell pepper,chopped
1 green pepper, chopped
1/2 c onion, chopped
2 c romaine lettuce
4 oz lean ground beef
2 T nutritional yeast
1/4 c plain greek yogurt
1/4 c + 2 T salsa
1-2 t Taco Seasoning
Directions:
- Cook ground beef in skillet over med-high heat until beginning to brown
- Add in onion, peppers, and taco seasoning
- Cover and cook until veggies begin to soften
- Stir in 1/4 c salsa and tomatoes, cover, and cook another couple minutes
- Transfer mixture to large bowl with lettuce and toss
- Sprinkle with nutritional yeast
- Top with yogurt and remaining salsa
