Ingredients:
8 oz zucchini
1 container (7.5 oz) grape tomatoes
2 T tomato paste
1/2 t minced garlic
1 t Italian seasoning
1/8 t garlic powder
1/8 t onion powder
pink salt, to taste
1/8-1/4 c water + water for boiling zoodles
Directions:
- Bring water to boil in medium saucepan
- Sprialize zucchini and place in boiling water
- After zucchini noodles are cooked to desired consistency, remove from heat and strain
- In second saucepan, combine 1/8 c water, garlic, grape tomatoes, and spices and bring to a boil then cover and reduce heat
- Cook sauce ingredients until tomatoes start to pop open, stirring occasionally
- Stir in tomato paste and extra water, if needed
- Pour sauce over zoodles and serve
