Zoodles with Quick Tomato Sauce

8 oz zucchini
1 container (7.5 oz) grape tomatoes
2 T tomato paste
1/2 t minced garlic
1 t Italian seasoning
1/8 t garlic powder
1/8 t onion powder
pink salt, to taste
1/8-1/4 c water + water for boiling zoodles


  1. Bring water to boil in medium saucepan
  2. Sprialize zucchini and place in boiling water
  3. After zucchini noodles are cooked to desired consistency, remove from heat and strain
  4. In second saucepan, combine 1/8 c water, garlic, grape tomatoes, and spices and bring to a boil then cover and reduce heat 
  5. Cook sauce ingredients until tomatoes start to pop open, stirring occasionally
  6. Stir in tomato paste and extra water, if needed
  7. Pour sauce over zoodles and serve
