Zucchini Bread

Ingredients:

1/2 c coconut flour
1 T cinnamon
½ t nutmeg
3/4 t baking soda
1/2 t pink salt
4 eggs
24-36 drops SweetLeaf stevia
1 c zucchini, shredded finely
1 ripe banana, mashed
1 T coconut oil

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease a bread loaf pan or line with parchment paper.
  3. Shred zucchini finely. 
  4. Place shredded zucchini in kitchen towel and squeeze all the moisture out of it.
  5. Process eggs, stevia, coconut flour, oil, and banana together in food processor.
  6. Stir cinnamon, nutmeg, salt, baking soda, and zucchini into mixture until the batter is smooth.
  7. Pour batter into loaf pan.
  8. Bake for 45-50 minutes (or until a toothpick inserted into the center comes out clean).
  9. Allow to cool. 
  10. Remove from loaf pan and slice into 8 slices.
