Zucchini Pizza Crust

4 c grated zucchini 
1/2 c mozzarella cheese, shredded
5 T almond meal
3 T parmesan cheese
1 t oregano
1/2 t garlic powder
pinch of pink salt
1 egg, beaten 


  1. Preheat oven to 450 degrees
  2. Grease baking sheet
  3. Microwave zucchini in bowl for 5 minutes
  4. Drain zucchini and wring out moisture with cheesecloth or kitchen towel
  5. Add mozzarella, almond meal, parmesan, oregano, garlic powder, pink salt, and beaten egg and stir until well combined
  6. Divide crust mixture into two balls
  7. Use your fingers to press out the crust mixture into two circles on baking sheet
  8. Bake about 12-15 minutes, until firm and starting to brown
