Ingredients:
4 c grated zucchini
1/2 c mozzarella cheese, shredded
5 T almond meal
3 T parmesan cheese
1 t oregano
1/2 t garlic powder
pinch of pink salt
1 egg, beaten
Directions:
- Preheat oven to 450 degrees
- Grease baking sheet
- Microwave zucchini in bowl for 5 minutes
- Drain zucchini and wring out moisture with cheesecloth or kitchen towel
- Add mozzarella, almond meal, parmesan, oregano, garlic powder, pink salt, and beaten egg and stir until well combined
- Divide crust mixture into two balls
- Use your fingers to press out the crust mixture into two circles on baking sheet
- Bake about 12-15 minutes, until firm and starting to brown
