Ingredients: 

2 eggs
1 c pumpkin puree
1/2 c unsweetened almond milk
2 droppersful SweetLeaf vanilla creme stevia
1 t pumpkin pie spice (or more, to taste)
1/4 t pink salt

Directions: 
  1. Preheat oven to 350 degrees
  2. Grease pie pan lightly with coconut oil
  3. In a medium-sized bowl, slightly beat eggs
  4. Whisk in  pumpkin puree, stevia, salt, spice, and almond milk
  5. Pour batter into prepared pan
  6. Bake for approximately 1 hour  
  7. Check to see if toothpick inserted into center comes out relatively clean
  8. Remove from oven and allow to cool
