Chocolate Covered Banana Bites

1 banana
1/4 c coconut oil
2 T unsweetened cocoa powder (Hershey’s Special Dark)
stevia, to taste


  1. Cut banana into 16 slices, no more than 1 cm thick each
  2. Place each banana slice into a candy cup, mini muffin tin, or silicone mini muffin mold
  3. Melt coconut oil
  4. Stir in cocoa powder and stevia
  5. Pour chocolate mixture over banana slices
  6. Place into freezer for at least 1 hour (store in freezer)
