Ingredients

1 1/4 c light olive oil, divided (not extra virgin olive oil)
1 egg
1/2 t mustard powder
1/2 t salt
1-4 T lemon juice

Directions
  1. Make sure all ingredients are room temperature before starting recipe.
  2. Place the egg, 1/4 cup olive oil, mustard powder, and salt in blender or food processor (or use stick blender).
  3. Mix thoroughly.
  4. Slowly drizzle remaining 1 cup olive oil in while food processor or blender is running.
  5. After mixture has completely combined, stir in lemon juice to taste with a spoon.
