Ingredients:
6 oz shredded coleslaw (cabbage and carrots)
1/2 bell pepper (color of choice)
1/2 yellow onion
1 jalapeno pepper (seeds removed)
2 oz shredded chicken
1 egg
1 T coconut oil
Sauce:
1 T Simple Girl Sweet Mustard dressing (or dijon mustard)
1 T coconut aminos
1/2 t minced garlic
1/2-1 t lime juice
fresh ginger (to taste)
6 drops stevia
Directions:
- Melt coconut oil in skillet over med-high heat
- Chop peppers and onion
- Cook peppers, onion, and coleslaw mix in skillet until softened
- Push veggies to side and scramble eggin skillet
- Stir in shredded chicken
- Combine all sauce ingredients in small bowl
- Pour sauce over skillet and stir to mix in
