8 oz. lean ground beef
12 oz. frozen chopped peppers
1 chopped onion
1-2 tsp. Taco Seasoning
2 c. spinach
1 c. coleslaw mix (or shredded cabbage)
2 T. nutritional yeast
2 T. canned green chiles
2 T. salsa
¼ c. tomato paste
- Brown beef in skillet over medium high heat.
- Stir in peppers, onions, and cabbage mix then cover and cook, stirring occasionally, until softened.
- Stir in spinach, chiles, and taco seasoning and cook a few more minutes.
- Add salsa, tomato paste, and nutritional yeast and stir until combined.
