Philly Cheesesteak Bowl

1 lb lean ground beef
1 yellow or white onion, chopped
2 green peppers, chopped
8 oz mushrooms, sliced 
5 mild (or hot) pepper rings, chopped
2 T canned coconut cream
1 T butter
2 oz mozzarella cheese
1 c riced cauliflower
1/4 c Easy Ketchup
pink salt and pepper, to taste


  1. Brown beef in skillet then transfer to bowl and set aside
  2. Melt butter in skillet 
  3. Add onion, peppers, pepper rings, and mushrooms and cook until softened
  4. Stir in pink salt, pepper, coconut cream, riced cauliflower, and cheese
  5. Cover and allow to cook a few minutes, until cheese is melted
  6. Stir in Easy Ketchup
  7. Portion into 4 bowls
