Ingredients:
1 lb lean ground beef
1 yellow or white onion, chopped
2 green peppers, chopped
8 oz mushrooms, sliced
5 mild (or hot) pepper rings, chopped
2 T canned coconut cream
1 T butter
2 oz mozzarella cheese
1 c riced cauliflower
1/4 c Easy Ketchup
pink salt and pepper, to taste
Directions:
- Brown beef in skillet then transfer to bowl and set aside
- Melt butter in skillet
- Add onion, peppers, pepper rings, and mushrooms and cook until softened
- Stir in pink salt, pepper, coconut cream, riced cauliflower, and cheese
- Cover and allow to cook a few minutes, until cheese is melted
- Stir in Easy Ketchup
- Portion into 4 bowls
