Stuffed Bell Peppers (or Tomatoes)

4 bell peppers
8 oz ground chicken
1 c cottage cheese
1/2 c chopped tomatoes
1 c baby spinach
spices of choice, to taste

  1. Preheat oven to 350 degrees
  2. Cook chicken with spices in skillet then transfer to bowl
  3. Slice tops off of peppers and place in to baking pan
  4. Chop tops and add to bowl with chicken
  5. Stir in spinach, tomoatoes, and cottage cheese
  6. Spoon mixture into each pepper
  7. Bake for 30-45 minutes

(Alternatively, you can hollow out and stuff tomatoes instead of peppers)
