Very Berry N'Oatmeal

Ingredients:

2 Tablespoons flax meal
½ cup unsweetened almond milk 
1/2 cup + 1 T egg whites
1/4 c strawberries
1/4 c blueberries
1/4 t cinnamon
SweetLeaf vanilla cream stevia, to taste
extra berries, if desired

Directions:

  1. Combine berries, almond milk, flax meal, and cinnamon in saucepan heated to med-high heat
  2. Stir and cook until mixture start to bubble (Mash berries a little with spatula/spoon)
  3. Stir in egg whites and continue cooking while stirring until mixture thickens
  4. Add vanilla stevia, to taste
  5. Remove from heat and allow to cool and thicken a bit
    1. Top with additional berries, if desired
