Ingredients:
20 pitted dates
1/4 c cashews
1/4 c almonds
1 T prebiotic fiber (FiberYum IMO syrup)
1/4 c water
1 bag (34 g) freeze dried apples
1/2 t cinnamon
1 c egg white protein powder (or other protein powder of choice)
1/4 c almond flour +1/2 t cinnamon (combined in small bowl)
Directions:
- Preheat oven to 350 degrees
- Combine dates, cashews, almonds in food processor until well broken down
- Add in apples, cinnamon, prebiotic fiber, and protein powder
- Slowly add in water, up to 1/4 c, until mixture comes together
- Divide mixture into 12 balls
- Roll each ball in cinnamon almond flour
- Place onto parchment lined baking sheet and flatten into circle about 1/4 inch thick
- Bake for 10 minutes then flip cookies and bake 5 more minutes
