Ingredients:
Crust:
1 c almond flour
1 T cinnamon
½ t vanilla extract
2 T coconut oil
2 dropperfuls stevia, to taste
Filling:
¼ c coconut oil
3 T butter, softened
4 oz cream cheese, softened
2 T lime juice
3 dropperfuls stevia, to taste
3-5 baby spinach leaves
Directions:
- Preheat oven to 350 degrees
- Mix all crust ingredients together with fork
- Pack 1 tablespoon of crust mix in the bottom of 12 cupcake tins
- Bake for 5-7 minutes
- Remove from oven and let cool
- Blend filling ingredients until smooth
- Place filling evenly on top of each crust
- Freeze for one hour
