Ingredients:
1 (14.5 oz) can salmon
1 carrot, finely chopped
1/2 red bell pepper, finely chopped
4 eggs
1 T minced onion flakes
1 T dill
1 t lemon pepper
1/8 t celery seed
1/2 t pink salt
2 1/2 T coconut flour
Directions:
- Preheat oven to 425 degrees
- Line baking sheet with parchment paper
- Combine salmon, carrots, and bell pepper in bowl
- Add in eggs and spices, mixing with hands until well incorporated
- Add coconut flour and mix again with hands
- Scoop out 1/3 c mixture and form into patty on baking sheet
- Repeat 5 more times
- Bake for 10-15 minutes, until golden brown*
(*Alternatively, fry each patty in coconut oil for 2-3 minutes per side in hot skillet)
