Lemon Dill Salmon Cakes

1 (14.5 oz) can salmon
1 carrot, finely chopped
1/2 red bell pepper, finely chopped 
4 eggs 
1 T minced onion flakes
1 T dill
1 t lemon pepper
1/8 t celery seed
1/2 t pink salt
2 1/2 T coconut flour


  1. Preheat oven to 425 degrees
  2. Line baking sheet with parchment paper
  3. Combine salmon, carrots, and bell pepper in bowl
  4. Add in eggs and spices, mixing with hands until well incorporated
  5. Add coconut flour and mix again with hands
  6. Scoop out 1/3 c mixture and form into patty on baking sheet
  7. Repeat 5 more times
  8. Bake for 10-15 minutes, until golden brown*

(*Alternatively, fry each patty in coconut oil for 2-3 minutes per side in hot skillet)
Excellent served with Easy Tartar Sauce
