Personal Pineapple Upside Down Cake

2 T coconut flour
1/4 t vanilla extract
1/2 t apple cider vinegar
1/4 t baking soda
1 dropperful liquid stevia
1/4 c unsweetened almond milk
3 T liquid egg whites 
1 sliced pineapple ring (or 2 T crushed pineapple)
1-2 pitted cherries


  1. Place pineapple in bottom of mug and place cherry in center
  2. Combine coconut flour, vanilla, vinegar, baking soda, stevia, and almond milk in small bowl
  3. Whisk in egg whites
  4. Pour batter over pineapple and cherry
  5. Microwave 2-3 minutes (or bake at 350 for 20-30 minutes)
