Ingredients:
2 T coconut flour
1/4 t vanilla extract
1/2 t apple cider vinegar
1/4 t baking soda
1 dropperful liquid stevia
1/4 c unsweetened almond milk
3 T liquid egg whites
1 sliced pineapple ring (or 2 T crushed pineapple)
1-2 pitted cherries
Directions:
- Place pineapple in bottom of mug and place cherry in center
- Combine coconut flour, vanilla, vinegar, baking soda, stevia, and almond milk in small bowl
- Whisk in egg whites
- Pour batter over pineapple and cherry
- Microwave 2-3 minutes (or bake at 350 for 20-30 minutes)
