Spicy Turkey Cauli Rice

1 lb ground turkey, browned in skillet
4 c cauliflower florets
2 T olive oil
1 onion, chopped
3-4 cloves garlic, minced
4 medium tomatoes, chopped
1 fresh chili pepper, deseeded and chopped
1/2 t chili flakes
1/2 t cumin
1 t oregano
1/2 t garlic powder
1 c chicken stock or water
1/2 c fresh cilantro, chopped
1 t lime juice
pink salt and pepper, to taste
10 jalapeno pepper slices (more or less, to taste)


  1. Place cauliflower florets in food processor and pulse a few times until rice-like consistency is reached
  2. Heat olive oil in large skillet over medium heat
  3. Add onion, garlic, and chili and saute 5 minutes
  4. Stir in tomatoes, stock, oregano, cumin, and chili flakes
  5. Bring to simmer and cook for 20 minutes
  6. Add cooked turkey, garlic powder, salt and pepper
  7. Top with jalapeno slices, cilantro and lime juice before serving
