Ingredients: 

2 c. frozen pineapple
½ c. canned coconut milk
¼ c. pineapple juice
1 tsp. lime juice
1 T. shredded unsweetened coconut

Directions: 
  1. Combine pineapple and coconut milk in blender or food processor until well combined, scraping sides as needed.
  2. Add pineapple and lime juice and blend until smooth.
  3. Stir in coconut.
  4. Serve immediately.
