Ingredients:
2 c. frozen pineapple
½ c. canned coconut milk
¼ c. pineapple juice
1 tsp. lime juice
1 T. shredded unsweetened coconut
Directions:
- Combine pineapple and coconut milk in blender or food processor until well combined, scraping sides as needed.
- Add pineapple and lime juice and blend until smooth.
- Stir in coconut.
- Serve immediately.
