Oat-Free Granola Bars

1 c Trader Joe’s Super Seed & Ancient Grain Blend (or 1/4 c each buckwheat groats, chia seeds, flax seeds, quinoa)
1/2 c peanuts (or other nut of choice)
1/2 c shredded unsweetened coconut
3/4 c almond flour
1 t vanilla
1/4 c honey
1/4 c coconut oil
2 T unsweetened cocoa powder
1/2 c egg white protein powder (or other protein powder of choice)
1 T water


  1. Preheat oven to 350 degrees 
  2. Grease 8×12 baking pan 
  3. Grind super seeds/ancient grains, peanuts, and coconut in food processor until coarse flour consistency is reached
  4. Add almond meal, protein powder, cocoa powder, vanilla, honey, and coconut oil and process until well mixed
  5. Add water (more or less, as needed)
  6. Transfer mixture into pan and press down to spread until it is even and spreads to all corners of baking pan
  7. Bake for about 15-20 minutes
  8. Remove from oven and cut into 12 bars
  9. Let cool completely before removing from pan
