Buffalo Spinach Skillet

8 oz buffalo
9 oz baby spinach
8 oz mushrooms, quartered
1 green pepper, cut into bite-sized pieces
1/2 c cottage cheese
1 t onion flakes
1/4 c Simple Girl Carolina Style BBQ Sauce
1 T minced garlic
1/2 t xanthan gum


  1. Cook garlic and buffalo in skillet over med-high heat
  2. Drain liquid then return to stovetop
  3. Stir in onion flakes, green pepper, mushrooms, and spinach 
  4. Cover and cook until veggies soften
  5. Stir in BBQ sauce and cottage cheese
  6. Push veggies to edges of skillet and stir xanthan gum into liquid to thicken sauce
  7. Remove from heat and stir veggies into sauce
