Coconut Whipped Cream Topping

1 (14 oz) can coconut cream, chilled
1/4 tsp. plain or SweetLeaf vanilla cream liquid stevia
1/2 tsp. vanilla extract
1/4 – 1/2 tsp. xanthan gum (optional)


  1. Place mixing bowl & beaters or food processor bowl & blade in freezer for 5 minutes.
  2. Place coconut cream in bowl or food processor.
  3. Add stevia and vanilla.
  4. Whip or process until whipped topping consistency is reached, adding xanthan gum slowly, if desired.
  5. Store in fridge.
